If you plan to buy fish, it should be covered with a clear slime, the eyes should be clear, the scales tightly adhered, and the gills bright red. On the cut, the flesh should be pink, yellow or white (depending on the species). The tissues should fit tightly to the bones and there should be no unpleasant odor. It is better to choose small fish, as they contain fewer harmful impurities.
If you choose frozen seafood, pay attention to their appearance, absence of foreign odors and excessive amounts of ice.
