Food Sales in Ukraine

Food is the decisive factor that affects a person's well-being and quality of life. "We are what we eat" — a phrase attributed to Hippocrates nearly two and a half thousand years ago — remains relevant today, since our health depends directly on the foods we choose.

Range of Food Products

Chemically, food consists of proteins, fats, carbohydrates and trace elements. The content of these components determines the nutritional value of food for humans. In Ukraine, specialists distinguish a varying number of food groups (from 4 to 11). Let's look at the main ones.

Dairy Products

When discussing the benefits of milk and dairy products, calcium is mentioned first. Cheese and cottage cheese are richest in calcium. Milk also contains a whole complex of vitamins. In pasteurized milk they are better preserved than in sterilized milk. Fermented milk products play a special role because they contain beneficial lacto- and bifidobacteria. But milk can also cause harm. With an allergy to cow's milk proteins, lactose intolerance and certain illnesses, milk is recommended to be excluded from the diet.

Meat

Meat is one of the main sources of protein (along with fish) and vitamins A, D, B12. People consume various types of meat: beef, veal, pork, lamb, rabbit, chicken, duck. Some authors also include processed meat products in this group: sausages, frankfurters, etc. However, they cannot be considered true sources of protein, since their composition is dominated by fats, which are harmful to people in large quantities.

Fish and Fish Products

Canned and preserved fish, dried, salted and smoked fish are sources of protein and important Omega fatty acids. The chemical composition of different fish species varies greatly, while these products are rich in iodine, phosphorus, zinc and fluorine. Fish skin contains a lot of collagen, a protein of exclusively animal origin. Collagen is widely used in the cosmetic industry and as dietary supplements.

Vegetables and Fruits

Plant-based foods are a source of vitamins and minerals beneficial to humans, dietary fiber and antioxidants. Today we often ask ourselves: what fruits and vegetables have we not yet tasted? However, nutrition researchers argue that the most beneficial foods are those familiar to our region. Exotic fruits and vegetables should be consumed in small portions.

Bakery Products

For a long time, bread and bakery products, cereals and pasta were considered the basis of the food pyramid. Cereal products still remain a consistent source of slow-release carbohydrates, Omega fatty acids and B vitamins.

The most beneficial items in this group are:

• buckwheat groats;
• oat groats;
• whole grain and rye bread;
• pearl barley.

The least nutritious are:

• white polished rice;
• semolina;
• white wheat flour and products made from it.

Confectionery

This is a group of products whose harm outweighs their benefits. WHO strongly recommends limiting sweets due to the negative effects of sugar. However, the human genome literally encodes a craving for sweetness. Confectionery causes a release of dopamine, the pleasure hormone, and even after a small candy we feel happier. Therefore, today it is difficult to imagine a diet completely free of sweets.

Features of Choosing Food Products

Choosing food products consists of two main stages:

1. Organoleptic evaluation of products using the senses. Rotten spots, cracks, damage — these indicate poor quality goods. Many buyers focus on the appearance of the product. However, this is only the first step toward obtaining quality food. If a product looks good, it does not mean it 100% meets the criteria of "tasty and healthy food."
2. Studying labeling — the information placed on the packaging and label. All information about the product should be accessible and read. Each product has its own shelf life, after which it becomes unfit for consumption. Usually, the shorter the shelf life, the fewer preservatives and stabilizers are present in its composition. An unnaturally long shelf life may arouse suspicion. For example, high-quality dairy products, semi-finished products and fresh fish do not keep for long. Ingredients are the most informative part of labeling. However, not everyone reads them. If 83% of people in Ukraine pay attention to product shelf life, only 51% of our fellow citizens study the composition and content of individual ingredients.

Important! The composition is usually calculated per 100 g of product or per serving, so you need to pay attention not only to the product composition but also to its weight or the number of servings in the package.
